We get our green beans from Indonesia, from a cooperative and a friend who buy from small family owned farms (microlots).
WHAT IS ARTISANAL ROASTING?
It is effort, care, attention, love. Can the food parents prepare for their baby be same with an industrial food product?
“When roasting the beans, the goal is maximizing the sweetness and flavor while reducing bitterness and maintaining a certain acidity.
Since the conditions that the bean is exposed to until it reaches the roasting stage and the conditions in the roasting environment may change each time, even if you roast the same kind of bean exactly the same way as the previous one, the result still will be slightly different.
In artisanal roasting, all senses come into play in addition to very sensitive equipment such as thermocouples, pressure gauges, and thermometers. Gradual changes in color, odor, sound, and size of beans are observed as the progress of roasting is monitored.
Artisanal roasting allows the creation of a different roasting profile with each roast and each new coffee. As the artisan roasts, they will better understand how each bean reacts and how it should be roasted,” says Emre.
